Recipe: Cabernet Sauvignon Chocolate Cookies

I know lately I haven’t been posting regularly, and I apologize. I want to get back into the habit of writing and baking for the blog. I will be making historical posts again soon and adding small recipes to the blog’s Instagram account. This week, I made a friend for her birthday these Cabernet Sauvignon chocolate cookies. They are chewy and soft and filled with a Cabernet Sauvignon chocolate ganache. They are the perfect cookie for the wine and chocolate lovers in your life. I didn’t add too much wine to the ganache because I wanted both flavors to come through in the ganache. If you want to booze them up more add more wine if you like, but the recipe has a nice balance in the flavors. Below you will find the recipe for the cookies and the ganache. The ganache can also be whipped up into a mousse if you have any leftover ganache or make a nice sauce for ice cream if you melt it down. Enjoy the recipe and let’s get to baking.

Cabernet Sauvignon Ganache

Ingredients                

  • 8 oz of semi sweet chocolate chips
  • 8 oz of heavy cream
  • 6 oz of Cabernet Sauvignon

Method:

1. In a small saucepan bring to a rolling boil the heavy cream. While the cream is warming up, add the chocolate chips into a bowl and set aside.

2. Once the heavy cream is ready add it to the chocolate chips and let stand for a minute. Begin to mix until the mixture is smooth and velvety. Then add the wine and mix until well combined. Place in the refrigerator and allow it to set up.

Chocolate Cookies

Ingredients                

  • 1 stick of unsalted butter at room temperature
  • 3/4 cup of brown sugar
  • 3/4 cup of granulated sugar
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 2 cups of all purpose flour
  • 1/4 cup of cocoa powder
  • 3/4 teaspoon of baking soda
  • 1/8 teaspoon of salt (* note you can add up to 1/2 teaspoon of salt, I add less for health reasons)

Method:

1. In a standard mixing bowl with a paddle attachment, cream the butter and sugars until well combined. Add the eggs and vanilla one at a time until well combined.

2. Add the dry ingredients and mix until it is a dough consistency.

3. Make small balls of the dough and make a hole in the middle. In a piping bag place the cabernet sauvignon ganache and pipe it into the cookie dough balls. Fill to right below the rim. Pinch the tops of the cookie or if there isn’t enough dough pinch some dough from the batch.

4. Once all the cookies have been prepped, bake at 375F for 12-14min.

5. Once the cookies are ready allow them to cool and eat and enjoy.
