Recipe: Blueberry Lavender Lemonade Popsicles

I recently had lavender lemonade and was blown away by the flavor combination. I personally hate lemonade and do not find it to be refreshing at all, but I was curious about this particular beverage. I found it to be utterly delightful and surprisingly refreshing. I don’t know if it was the combination or higher quality lemonade, but I loved it. I love using lavender when I bake or make drinks ( alcoholic and nonalcoholic) it has a subtle sweet, aromatic, floral flavor that can elevate a dish or drink in a new way. Yes, if you use too much it taste like you are eating soap, but if you use it to taste you can make something really tasty. I wanted to try and make a lavender lemonade concoction of my own, and thought what better way to try it than in popsicle form. I added blueberries to the mix for an added layer of flavor and to balance the tangy flavor of the lemonade. Below you will find the recipe to this fruity, floral, tangy frozen treat.

Blueberry Lavender Lemonade Popsicles

Yield: 8 popsicles

Ingredients                

  • 16 oz Frozen blueberries
  • 100g Granulated sugar
  • 5 tsp Lavender
  • 160g Frozen lemonade concentrate
  • 400 g Water

 

Method:

1. Place frozen blueberries in a medium saucepan and boil until soft. Then place blueberries in a food processor and pulse until you have a blueberry puree.

2. In a small saucepan bring to boil water with the lavender and allow to steep for about 5 minutes. Strain lavender buds from water and allow to cool and set aside.

3. Return blueberry puree to saucepan and add sugar, lemonade, and lavender water and whisk until well combined. *( Note: if you are concerned that the lavender might be too floral do one teaspoon at a time and taste it as you go.)*

4. Place mixture in popsicle molds and allow to freeze overnight in the freezer.

5. Pop out the popsicles and enjoy!
